Ingredients
Carrots - 2
Tomato Paste - 0.25cup
Butter - 1tbsp
Beef Stock - 1cup
Ground Beef - 1lb
Corn - 0.5cup
Brown Rice - 1cup
Instructions
Boil the brown rice according to the package instructions. Peel the carrots (if needed) and chop them into small pieces. Set both aside. And preheat the oven to 350 degrees F (175 degrees C).
In a frying pan, cook the ground beef until browned. Drain off any excess fat.
Add the butter, chopped carrots, corn (if using), and tomato paste to the cooked ground beef. Cook for about 5 minutes until the carrots are tender.
