Ingredients

  • Chicken Breasts (boneless, skinless) - 2
  • Chicken Thighs (bone-in, skinless) - 2
  • Peas - 1cup
  • Apple - 1
  • Carrots - 2
  • Kidney Beans - 1cup
  • Green Beans - 1cup
  • Sweet Potato - 1
  • Olive oil - 1tsp
  • Water (adjust as needed)

Instructions

  1. Place the boneless, skinless chicken thighs and breasts in the slow cooker.
  2. Add enough water to the slow cooker to just cover the chicken.
  3. Prepare the ingredients: Peel and chop the sweet potato. Core and chop the apple. Peel and chop the carrots. Drain and rinse the kidney beans.
  4. Add the prepared sweet potato, apple, carrots, kidney beans, and frozen green beans to the slow cooker.
  5. Cook on low heat for 8-9 hours, allowing the flavors to meld together.
  6. When the cooking time is almost finished, add the peas and cook for an additional 30 minutes.
  7. Drain off any excess liquid from the slow cooker.
  8. Add olive oil to the slow cooker and gently mash the ingredients together using a fork or potato masher.
